"Txakoli" has been known for centuries in the Pays Basque and can be found on the green hills of Getaria and Zarautz in Guipuzkoa which dominate the Atlantic and are bathed in the sea spray.
This is the smallest of the A.O.C. (Apellation d'Origine Contrôlée) in Spain.
The vines generally cascale in staircases down to the sea and produce a little fuity wine, with a slight note of acidity, which is very pleasant. Associated with the Basque gastronomic tradition, and ideal to accompany fish, crustacean and salad dishes, the experts particularly reccommend it with a plate of anchovies.
